This keto pound cake is the best low carb dessert recipe you’ll ever come across. It’s so easy to make and tastes amazing!
The classic almond flour pound cake is a low-carb, keto-friendly dessert that will satisfy your sweet tooth.
My favorite dessert is cake, and this blueberry walnut pound cake does not disappoint! Our keto pound cake recipe is rich and buttery, with a flavor of vanilla blueberries.
What is the origin of the name Pound Cake?
Pound cake is a popular dish in the United States. It’s buttery, rich, and delicious on its own or in dishes. A common pound cake recipe calls for a pound of each of the following ingredients: sugar, butter, eggs, and flour. While that sounds fantastic, it isn’t keto-friendly. Because keto components like almond and coconut flour cook differently, we tweaked the proportions slightly. Overall, it employs the same components you’re used to, but it’s a little healthier.
But what about pound cake, which doesn’t have any leaveners?
That’s correct, there are no leaveners in a typical pound cake recipe! However, this low carb keto pound cake recipe is unique. Because almond flour is heavier than white flour, it will not rise or expand as much. Instead, we use a pinch of baking powder to give it a little extra rise, just like the original recipe.
Pound Cake Gluten-Free
Our gluten-free, sugar-free keto pound cake recipe is low in carbs and high in fat. By substituting almond flour for all-purpose flour, we can make this dish gluten-free and low in net carbohydrates. Because almond flour is strong in fiber, it has a low total net carb count and is simple to incorporate into a low carb diet (1). Recipes for keto cakes that utilize only almond flour and no coconut flour are generally thick. However, in this situation, a thicker batter is the desired outcome, so don’t worry about it!
Is it possible to substitute Coconut Flour for Almond Flour?
Coconut flour should not be substituted with almond flour. There are a few reasons why certain low-carb flours cannot be substituted.

- Coconut flour is far less expensive than almond flour. You’ll need 1/3 of the amount of almond flour in coconut flour, according to an usual ratio. However, the almond base provides a lot of weight to this cake, resulting in 2/3 less overall flour if you use coconut.
- Coconut flour, unlike almond flour, is highly dry and absorbent. To prepare the same dish, you’ll need a lot less of it.
- Coconut flours are drier than other flours, which can result in a dry final product. We want to ensure that the cream cheese and room temperature butter perform their job of making our keto cake recipes moist!
If you don’t have almond flour on hand, almond meal should suffice. If you try this recipe again, feel free to experiment with different keto-friendly flours and share your results in the comments below!
Sweeteners for Keto
The finest keto pound cake must have the proper sweetness balance without dominating the vanilla base. In order to achieve this, we use a combination of erythritol and liquid stevia in our formula. In keto recipes, we found that erythritol tastes the most like sugar while yet having a low net carb count. It can induce stomach upset if ingested in large amounts, which is why we combine it with liquid stevia. They’ll prepare the best low-carb pound cake recipe together. If erythritol isn’t available, you can use alternative sugar-free sweeteners. We recommend the following sugar-free keto-friendly options:
- Allulose is a granular sugar-free sweetener that works effectively as a substitute for erythritol. It has a low net carb count, making it ideal for any keto cake or dessert recipe. One thing to keep in mind is that it costs a little more than conventional erythritol.
- Monk Fruit– This can be used instead of liquid stevia. It has a sugar-free keto vanilla flavor to it. However, it complements the fresh blueberries and walnuts in this pound cake well.
- Blends of Monk Fruit Erythritol– This is an excellent alternative to an expensive high-quality sweetener like allulose. It’s a step up from regular erythritol without being outrageously priced. It’s still sugar-free and will make the finest keto pound cake you’ve ever had.
When it comes to cooking keto pound cake and choosing a low carb sweetener, it all comes down to personal preference and money. Allulose is a novel and intriguing healthy sweetener if you have the money to spend. However, if you want to stay true to the keto diet, any of these alternative sweeteners are excellent choices.
Is it possible to make a dairy-free pound cake with almond flour?
It’s difficult to make this dairy-free keto pound cake recipe. While it is doable, it will necessitate additional shopping and ingredient research. The following are the substitutions you’ll need to make:
- Coconut oil or vegan butter can be substituted for butter. While vegan products aren’t ideal, in this situation they’ll be closer to the original flavor than coconut oil.
- Cream Cheese– Unless you use a vegan cream cheese, there is no way to avoid using cream cheese. If you get a basic original vegan variety, it will have a comparable taste and texture. Check for hidden carbs on the label and account for them in your macros.
- Sour Cream– Last but not least, we used sour cream. This ingredient isn’t found in conventional pound cake, but we think it enhances the flavor of our keto pound cake. It will add moisture to the cake in a way that butter and cream cheese alone cannot. There are vegan sour cream choices, but standard dairy-free yoghurt would suffice. Make sure it’s either plain or keto vanilla. In order to fit keto macros, it should also be sugar-free.
These are all the dairy-containing ingredients, as well as ways to replace them. However, we must constantly warn that when substituting so many ingredients, the recipe may not taste as good as it should. It was designed to be a low-carb keto vanilla pound cake that tastes as authentic as possible. Any change in component might result in a change in flavor or texture.
Mix-ins for Keto Pound Cake
Blueberries and chopped walnuts are included in our keto pound cake recipe. Those, though, aren’t the only possibilities. Get creative and try some of our other keto mix-in ideas:
- Lemon Pound Cake– For a delightful lemon pound cake recipe, add the juice and zest of a small lemon. Instead of lemon juice, you can use lemon extract. Combine water, confectioners’ erythritol, and lemon extract to make a fast glaze. (Note: If the cake batter is too runny, add a little more almond flour or coconut flour.)
- Coffee Cake Pound Cake– Toss the low carb pound cake base with cinnamon and keto brown sugar. In a separate bowl, combine a little more cinnamon, sweetener, and almond flour. Before placing the keto pound cake in the oven, sprinkle it on top.
- Pb&J Pound Cake– This one is for all the peanut butter and jelly lovers! Pour your mixed batter into the lined loaf pan and swirl in a few tablespoons of melted peanut butter and sugar free jelly. Bake and enjoy with extra peanut butter and jam!
The options for keto pound cake are truly unlimited. Add fresh berries, chocolate chips, nutty butter swirls, and so on to make it your own! Until you spice it up, this recipe is for a plain vanilla pound cake. It’s also a good idea to spice it up! The blueberries and walnuts we chose are just the beginning!
Keto Pound Cake: How to Make It
If you’re ready to bake some pound cake, gather your keto ingredients and let’s begin!
Ingredients
You’ll need almond flour, baking powder, ground cinnamon, and pink himalayan salt for the dry ingredients in this recipe. While baking powder isn’t a conventional pound cake ingredient, it’s essential for the extra rise in our keto version. The final dry components include erythritol for sweetness, as well as blueberries and walnuts for mixing.
Softened cream cheese, unsalted butter (softened), vanilla extract, sour cream for hydration, and liquid stevia are the wet ingredients in pound cake keto. To make the batter, you’ll also need four large eggs.
How to Make a Low-Carb Pound Cake
Preheat your oven to 350 degrees F before beginning to create low carb pound cake. Then, using your preferred oil, grease an 8.5 x 4.5 loaf pan. We like to use avocado oil or olive oil as a spray. To make removal easier, line the pan with parchment paper.
Then, minus the erythritol, blueberries, and walnuts, put all dry ingredients in a mixing dish. You can use a mixer or a whisk to stir the mixture.
Combine the butter, erythritol, and cream cheese in a separate bowl. When the mixture is frothy, add the vanilla, sour cream, and stevia and completely combine.
One at a time, beat in the eggs until all of the wet ingredients are mixed and there are no pieces of cream cheese or butter remaining. In two batches, add the dry ingredients and mix until no clumps remain.
We utilized blueberries and walnuts as our mix-ins. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. If the top is browning too rapidly, cover it with aluminum foil and bake it for another 15 minutes.
Allow to cool completely before cutting. Top with whatever you want; fresh blueberries and whipped cream are our favorites!
Freezing and storing
The keto pound cake freezes well and keeps for a long time in the fridge. Place the remaining loaf of pound cake in an airtight container in the refrigerator to keep. Alternatively, single slices can be frozen in zip top bags for longer preservation. Simply thaw the cake in the refrigerator or warm it in the microwave from frozen.
Making the Best Keto Pound Cake Tips
- Overbaking will result in a dry cake, which no one enjoys. Make sure your keto pound cake recipe doesn’t dry out by cooking it too long.
- Cover if Browning– Don’t worry if your keto pound cake is browning too much in the oven. Almond flour browns significantly more quickly than coconut or white flour. To insulate it from the direct heat, simply place some aluminum foil on top.
- Use Parchment Paper to Line the Pan– If you’re worried about this almond flour pound cake sticking to the pan, use parchment paper! Taking the pound cake out of the loaf pan is a breeze with parchment paper. It also makes it easy to clean the loaf pan.
What to Do With Pound Cake Leftovers
If you don’t want to freeze leftover pound cake, there are plenty of other options! Among the possibilities are:
- With our mason jar ice cream, we’re including a slice or two! Break up a slice of keto pound cake and combine it with keto ice cream in a shaker. Every piece of this keto cake recipe will be filled with delectable bits.
- Make a plain keto pound cake first, then add the toppings. Make a basic vanilla extract pound cake instead of adding mix-ins to the low carb pound cake recipe. Then, for the ultimate strawberry shortcake, top it with strawberries and keto whipped cream!
- Cake pops or balls made using keto ingredients. Combine crumbled keto pound cake and our sugar-free frosting recipe in a mixing bowl. Make balls out of it and freeze them. Keto cake pieces, dipped in sugar-free melting chocolate chips.
Each of these simple recipes takes only a few minutes to prepare and has no further cooking time! That means you can quickly adapt and tweak this simple keto pound cake recipe to suit your specific dessert demands.
